Help with Chinese characters

I have a boat that was built in Hong Kong and I'm attempting to have a bronze plaque made with the boat's yard number and origin information. It will look similar to this:

I have two dilemmas:
1. The plaque company needs the Chinese characters in an eps file saved as curves or outlines - black characters on white;

2. Because this plaque belongs to someone else's boat, I don't know if all the Chinese characters represented on this image's plaque should also be on mine, since my boat has a different Yard No and a different Year. So I need to know what all the Chinese characters mean on this example.

Would anyone in this forum be able to help me?

The Chinese characters on the plaque are:
香港 財利船廠 (in reverse order)

...which means the same thing as the two lines of English below it:
Cheoy Lee Shipyard Hong Kong
